This is not essentially a Recipe book, although a number of recipes are given, but a guide to those interested in Preserving. Suggestions are given for the best methods to be adopted under present conditions. The various ways of bottling fruit are discussed and special chapters are devoted to jam making, fruit jellies, and syrups, storing, drying, and freezing fruit and vegetables and the making of pickles, chutneys, sauces and wines.
The contents are based on the valuable experienced gained at the Long Ashton Research station Experimental Kitchen.
